Artichoke Mushroom Cannelloni Lasagna
This dish is wonderful served as a
pasta course or first course. It is simple to do because you can make most
of it ahead of time.

California Rolls - American-Style Sushi Rolls
Making sushi at home is easy
to do. Ingredients and equipment can be found at Japanese and Asian foods
stores as well as at most large food or grocery stores. I did a large amount
of reading on how to make sushi rolls before attempting my first ones. Sushi
making does requires a small amount of initial practice. Don't be afraid to
try!

This
recipe is courtesy of Jane Butel. Janes says, "I created this dish for a
light luncheon, while consulting for Conrad’s restaurant, named for
Conrad Hilton, the former owner of the historic landmark hotel where our
cooking school was located. To display them attractively, I make every
other cut on an angle and then arrange the longer angular side of each
cut toward the outside and arrange them in fours, making them look like
flowers, especially when centering each “flower” with a piece of
tomato."

Dolmades (Stuffed Grape Leaves)
Often served as part of a meze (appetizer) plate. Too often they come
from a can and are not fresh. Homemade are far superior to the canned. If you have never
tried fresh dolmades, now is the time. They are very easy to make and so delicious!

Hawaiian Spam Musubi
A favorite Hawaiian way to eat Spam is in the form of a musubi (pronounced
moo-soo-bee, with no accent). It is a fried slice of spam on rice pressed
together to form a small block, then wrapped with a strip of
seaweed. The Spam musubi is eaten as a sandwich or a snack, and it is perhaps
the Island's favorite "to go" or snack food. Spam musubi is literally everywhere
in Hawaii, including local convenience stores, grocery stores, school
cafeterias, and even at the zoo. Eating a Spam musubi seems to serve as a rite
of passage for newcomers anxious to attain "local" status.

James Beard's Onion Sandwiches
James
Beard refers to these sandwiches in his book Beard on Food.
I first tasted these wonderful onion sandwiches at a wine
tasting. They are fantastic! Excellent with wine! This is quite possibly the
perfect reward, along with a glass of wine, for yourself and your guests.

Lettuce Wraps or Lettuce Tacos
This is also a
great way to lower your
consumption of carbohydrates by replacing the bread with lettuce. Lettuce
wraps are very easy to create with an almost endless array of ingredient
variations. You can also use the same ingredients that you use in burritos,
tortillas, pita bread, or spring rolls. Jut let your imagination and taste
buds be your guide.

Did you know that Spring/Summer Rolls are Egg Rolls that are not fried? Because they are not fried, they are very low in fat and calories! Not only are these Rolls tasty, but they are also healthy. These are good as a starter or a main course.
