Cranberry Holiday Spread

Recipe Type: Appetizer, Cranberries, Dips & Spreads
Yields: serves many
Prep time: 20 min


Ingredients:

1 (8-ounce) package cream cheese, softened*
2 tablespoons frozen orange juice concentrate, thawed
1 tablespoons granulated sugar
1/8 teaspoon ground cinnamon
Zest (rind) of 1 orange
1/4 cup finely chopped dried cranberries or craisins
1/4 cup finely chopped pecans or walnuts

* Fat-free or low-fat cream cream cheese may be substituted. Soften cream cheese in microwave at high for 15 to 20 seconds.


Preparation:

In a medium-size bowl, beat together the cream cheese, orange juice concentrate, sugar, and cinnamon until smooth and fluffy. Stir in orange zest, dried cranberries, and pecans.

Refrigerate at least 1 hour before serving.

Serve with crackers of your choice.

Variation: Can be rolled into a log or ball and coated with additional chopped pecans or waluts before refrigerating.

Makes 1 1/2 cups.
