Game Day Nacho Recipe

This Game Day Nacho recipe is the most requested appetizer in my home during football season.  Game Day Nachos are easy-to-make that will sure to be a family favorite.  This traditional nacho dish is also perfect for a Super Bowl Party or any other get together with friends.  When making this nacho recipe, ingredients can easily be varied to your family’s taste.  Nachos can also make a great family meal; adjust the quantity to the number of people that you are feeding.  Of course there is always the collision with everyone trying to get the best melded chips onto their plate.  Spreading the cheese evenly and in layers will help to assure that there is no naked chip in the bunch.

Ingredients
  • 1 pound extra-lean ground beef (hamburger)*
  • 1 package taco seasoning mix or 1/2 cups diced jalapeno chile peppers**
  • 1 (16-ounce) can refried beans or black beans
  • 1 large onion, chopped
  • 2 cups sharp Cheddar cheese, shredded
  • Tortilla Chips
  • 1 head lettuce, chopped
Instructions
  1. In a large frying pan over medium-high heat, add ground beef and taco seasoning mix or chile peppers; saute until brown.  Remove from heat and drain off any fat and discard.

  2. On individual serving plates or a large ovenproof platter, spread the refried beans, cooked ground beef, sliced onion, and cheddar cheese.  Arrange corn chips around sides of dish.

  3. In a microwave oven or conventional oven, heat just until cheese starts to melt. Remove from oven.

  4. To serve, top with lettuce and any toppings of your choice (see Optional Topping Ideas above). NOTE: I sometimes place the prepared toppings in individual bowls and let everyone choose their toppings to add.

  5. Makes 4 servings.

Recipe Notes

* Ground chicken could be substituted, if you desire.

** Vary the hotness of the nachos to your taste.

*** You can substitute with a variety of different cheeses, such as hot pepper cheese, or Monterery Jack cheese.
