One of my favorite childhood treats! My mother always made these with leftover frosting (I thinks she made extra frosting on purpose). To this day, when I want a quick chocolate fix, I make these Chocolate Graham Cracker Cookies.

Chocolate Graham Cracker Cookies

2 cups powdered (confectoners) sugar
1/4 cup butter, softened
2 tablespoons unsweetened
cocoa
3 tablespoons liquid (water, coffee, or milk)
1/4 teaspoon pure vanilla extract
Graham Cracker squares

In a small bowl, combine powdered sugar, butter, unsweetened cocoa , liquid of your choice, and vanilla extract until mixed to a spreading consistency.
NOTE: Depending on how precise you are with your measuring, you may need to either add additional powdered sugar or liquid to get a good spreading consistency.


Spread on graham cracker squares. Either eat open faced or press another square of a graham cracker on top.
