Date Squares

1 cup dried pitted dates, finely chopped with an oiled knife
1 cup chopped walnuts
3 tablespoons all-purpose flour
1 teaspoon baking powder
1 cup sugar
3 eggs, beaten
Powdered (confectioners) sugar
 

Preheat oven to 350 degrees F. Lightly butter a 9-inch square baking dish.

In a large bowl, combine dates, walnuts, flour, baking powder, sugar, and eggs. Spread mixture onto bottom of prepared baking dish. Bake 35 minutes; remove from oven and cool on a wire rack for 15 minutes. Cut into squares.

Toss warm squares a few at a time in confectioners sugar, then transfer to a rack to cool completely. Sprinkle with more confectioners sugar just before serving.

Date Squares keep, layered between sheets of wax paper or parchment paper, in an airtight container at room temperature 1 week. These cookies also freeze well.

Yields 1 dozen bars.
