A very gourmet sauce that goes well with either smoked or baked salmon.

Cucumber-Caviar Sauce

1 cup sour cream
Juice from one lemon
1 cup finely chopped, seeded and peeled cucumber
4 ounces black caviar (of your choice)

In a medium bowl, combine sour cream, lemon juice and chopped cucumber until well blended. Store, covered, in refrigerator until ready to use. To serve, gently stir in caviar.

Makes 1 1/2 cups.
