This delicious and very easy-to-make Oven Roasted Asparagus recipe was shared with me by Dina Calanchini of Sacramento, CA. Dina belongs to a Ladies Dinner Group in the Sacramento area, and they have lots of fun creating and cooking many different types of foods. Oven-Roasted Asparagus Recipe

Recipe Type: Asparagus, Balsamic Vinegar, Vegetables
Yield:
4 servings
Prep time: 10 min
Cook time: 5 min


Ingredients:

1 to 2 bunches of asparagus spears
Extra-virgin
olive oil
Coarse salt or sea salt
Coarsely ground black pepper
1 teaspoon good-quality balsamic vinegar
1 tablespoon soy sauce
1 tablespoon butter

Preparation:

Preheat oven to 425ºF.

Wash the asparagus and snap or cut off the tough ends of the asparagus. Arrange asparagus in a single layer in a shallow baking pan.

Drizzle the asparagus with olive oil until well coated. Sprinkle with salt and pepper.

Roast the asparagus in the oven until tender, approximately 12 to 18 minutes, depending on the thickness of the asparagus spears and until the desired tenderness. Alternatively, put the asparagus on the barbecue grill over medium-high to high heat and roast for approximately 8 to 10 minutes, or until desired tenderness. If roasting on the barbecue, the asparagus requires constant turning to avoid burning the bottom.  

In a small saucepan over medium heat, heat the balsamic vinegar and soy sauce. Add the butter and continue to stir until melted and incorporated. Remove from heat and drizzle the sauce over the cooked asparagus.  

Transfer asparagus to a serving platter and enjoy!

Makes 4 servings.
