This delicious Too How To Cook Salad recipe and photo were shared with my by

Karen says, "I dislike cooking on hot summer days. When I really
don't want to cook, I fall back on this versatile salad for a healthy and
complete meal. If you keep a well-stocked pantry and a supply of fresh produce on
hand, this salad is a snap to make! My husband loves this dinner
salad."

To Hot To Cook Salad - Summer Salad Recipe
Recipe Type: Salad and Salad Dressing,

Green Beans
Yields: serves

Prep time: 15 min
Ingredients:
Lemon and Garlic Vinaigrette (click
on the underlined for the recipe)*
Romaine lettuce,
washed, dried and broken up into large leaves
Butter lettuce, washed, dried
and broken up into large leaves
Beef Tri-Tip Roast,
sliced roast beef, or sliced steak (room temperature)
Crisp-cooked green beans
Dill pickle spears
Hard-boiled egg slices
Kidney beans
Avocado slices
Garden tomatoes, sliced
Coarse salt or sea salt
Basil leaves, torn into pieces
* Any vinaigrette that you make
yourself will work.
Preparation:
Prepare
Lemon and Garlic Vinaigrette; set aside until ready to use.
Note; Serve vinaigrette at room temperature. Shake or stir just before serving.
Line the dinner plates with
Romaine and Butter
lettuces. In the center, place slices of leftover Beef Tri-Tip Roast,
sliced roast beef, or sliced steak.
Add crisp cooked green beans (simmer in salted hot water
for 7 minutes and then drain), dill pickle spears, sliced hard-boiled
eggs, red kidney beans, avocado slices, and fresh sliced garden tomatoes. Sprinkle with coarse sea salt and torn fresh basil leaves.
Drizzled the prepared Lemon and Garlic Vinaigrette over the top
and toss to combine.

beef roast
