Boneless Leg of Lamb Roast - How To Cook Perfect Boneless Leg of Lamb

In spring, lamb is one of my favorite foods. I’m particularly fond of the boneless leg of lamb because it is so easy to cook and carve. To many families, lamb is traditional to serve for Easter Dinner, but it makes a great meal for any occasions. When cooked to medium rare, it is flavorful and mild so that anyone who enjoys roast beef will also enjoy it.

Braised Lamb Shanks
Braised Lamb Shanks in Red Wine and Rosemary

If you love lamb, this recipe and method will become a favorite. It can be made one day ahead, which will allow you to remove any congealed fat prior to serving. The combination of red wine and fresh rosemary is delightful!

Braised Lamb Shanks
Braised Lamb Shanks with Anchovy Butter and Peppers

This unusual lamb shank dish is flavored with lemon, anchovies, and peppers. In the Fall, when I have an abundant sweet chile pepper harvest, I like to add them to braised dishes for an unexpected kick of flavor. The addition of anchovies was awesome and they also help thicken the sauce.

If you like bold, spicy chile peppers, you will love this sauce with the lamb chops. Not only is the color beautiful, but it has big flavors that will knock your socks off.

Lamb Osso Buco
I adapted this recipe from the cookbook, Not Afraid of Flavor, Recipes From Magnolia Grill, by Ben and Karen Barker. Every dish served at this wonderful restaurant is outstanding!

Moroccan Lamb Tagine with Sesame Prunes

Moroccan Lamb Tagine with Sesame Prunes
This Moroccan Lamb Tagine with Sesame Prunes dish is a traditional Moroccan tagine recipe (the dish is named for the cookware) which typically includes a combination of braised meat (often lamb, beef or chicken), fruits, root vegetables, and fragrant spices like cinnamon, saffron, and ginger). This dish is often served at holiday gatherings, weddings, and other special occasions with Mahrash Moroccan Bread for scooping up the meat and sauce.

Pomegranate Braised Lamb Shanks
Pomegranate Merlot Braised Lamb Shanks
This beautiful slow-cooked lamb dish is very delicious with many layers of flavor. It makes a beautiful presentation for your guests as well. Although the recipe calls for Merlot wine, I used Zinfandel wine because that is what we were drinking that night with dinner. Any full-bodied red wine would work well. I also used Pomegranate molasses because it is what I had on hand. I served this with the Potatoes Slow-Cooked in Beef Stock (see recipe below).
