Chocolate Peanut Butter S’more Cookies

Yields: 13 S’more Cookies

Ingredients:

26 Honey Butter Ritz Crackers
Smooth Peanut Butter
Jar of Marshmallow Fluff/Cream*
1/2 cup semi-sweet chocolate chips
1 tablespoon vegetable shortening
Wilton Pearlized Sprinkles (Pink Sugar Pearls)

Preparation:

Line a cookie sheet with waxed paper.

Spread peanut butter on 1/2 of the crackers. Spread marshmallow cream on the remaining crackers. Put the two halves together to form a sandwich; set aside.

In a small microwave-safe bowl, add the chocolate chips and the vegetable shortening. Place chocolate/vegetable shortening, uncovered, in the microwave for 30 seconds at a time on medium power until the chocolate is melted. Be very careful not to overheat it, as the chocolate may not look as if it has completely melted, because it retains its shape. You may still see lumps in it once you've stirred it, but don't worry; the residual heat of the chocolate will melt it. Do not rely on appearance alone when microwaving chocolate. The only way to know if the chocolate is fully melted is to gently stir it. Use a rubber spatula to stir the melting chocolate. NOTE: Do not leave in microwave until all the chocolate is melted. Dip your prepared sandwiches into the melted chocolate and place on the prepared cookie sheet. Top each sandwich with 3 Pink Sugar Pearls or decorate as you desire.

Store in the refrigerator until ready to serve.
