An excellent recipe for the novice cook as well as the experienced. This is the recipe my husband likes to make when he occasionally does cook dinner! This recipe is so easy to make and so good!

East-West Chicken

1/2 cup evaporated milk
1 tablespoon soy sauce
1 cup corn flakes crumbs*
1 teaspoon
salt
1/8 teaspoon pepper
4 chicken breasts halves (3-ounce each), boneless and skinless**

*Bread crumbs may be substituted. Check out Making Homemade Bread Crumbs.

** The U.S. Department of Agriculture, as well as food agencies in the United Kingdom and elsewhere, advises against washing poultry. Rinsing chicken will not remove or kill much bacteria, and the splashing of water around the sink can spread the bacteria found in raw chicken. Cooking poultry to 165 degrees Fahrenheit effectively destroys the most common culprits behind food-borne illness.

Spray a 13x9-inch baking dish with vegetable spray. In a shallow pie plate, combine evaporated milk and soy sauce. In another shallow pie plate, combine corn flake crumbs, salt, and pepper. Dip chicken into evaporated milk mixture and then roll in the seasoned crumb mixture.

Place chicken in prepared baking dish; cover with plastic wrap. Cook in microwave oven on high for 10 minutes; turn dish and bake another 8 to 10 minutes. Remove from microwave and let stand 3 to 5 minutes before serving.

Makes 4 servings.
