Question:

Being a court reporter, I hear all kinds of terms. In a deposition that I am working on involving microwave ovens, a menu item came up: salmon en cru (that's the phonetic spelling, of course.) I went to Google to see if I could find a culinary dictionary to be sure how to spell this particular recipe name. I am not looking for a recipe at all. I have searched and searched, but darned if I can find it!

Anyway, I was just hoping to enlist your help for this spelling. I thank you in advance and appreciate you just taking the time to read my email and about my "plight";) Thank you - Jane (2/28/05).

Salmon en croute = croute is French for "crust." En croute describes a food usually partially cooked (that is wrapped in pastry and baked).
