pickle eggs and beets for a festive gift. I propose hard boiling the
eggs and roasting the beets, placing the shelled eggs and skinned
beets in prepared quart jars, covering them with a cider vinegar
solution and steaming the product as I would for tomatoes, i.e. not
pressured canning. when complete, do I need to refrigerate? Even if
the eggs have been pickled? If you see any problems with this plan,

Yes, you need to refrigerate the eggs after pickling. Following is a quick recipe:
Thank you for your advice. I did the pickling yesterday and hope that I am still ok with getting them in the refrigerator. Also, I canned an eggplant relish with a tomato base.
