Stilton Blue Cheese Relish

This outstanding recipe was shared with me by Kieran Sienkiewicz of Portland, Oregon. Kieran is an outstanding cook and served this excellent relish with a smoked pork tenderloin roast. On it's own, it also makes a wonderful salad or an appetizer relish.

Stilton Blue Cheese Relish

1 pound Stilton blue cheese, crumbled
2 to 3 tablespoon extra-virgin olive oil*
1/2 medium red
onion, 1/8-inch dice
2 green onions, 1/8-inch dice
2 to 3 cloves garlic, finely chopped
Walnuts halves to taste
1 to 2 Granny Smith
apples, sliced thin
Freshly ground black pepper

* Add just enough olive oil to lightly coat the blue cheese.

In a large bowl, add crumbled blue cheese; drizzle with just enough olive oil to coat. Gently mix in red onion, green onion, garlic, and walnuts.

Just before serving, stir in sliced apples (make sure the apples have enough olive oil to keep them from turning brown - add additional olive oil if needed). Add black pepper to taste.
