Cherry Tomato Salad With Basil

I love tomato season! I can't get enough of vine-ripened tomatoes.  My husband and I eat tomatoes in some form every night during this season.  Use fresh vine-ripened tomatoes either from your own garden of buy them at your local Farmer's Market. Forget those bland-tasting tomatoes from your super market.

Cherry Tomato Salad With Basil

I can't give you exact amounts for this recipe, as I just go into my garden and pick as many tomatoes as I need or want. I then add onions, basil, and the seasonings to taste. Be creative with this recipe. So simple to make and so delicious!

Fresh vine-ripened cherry tomatoes
Red onion, sliced very thinly
Coarse
salt or sea salt
Freshly ground
black pepper
Extra-virgin olive oil
Basil leaves

Halve the cherry tomatoes and place in a bowl. Slice the onion into very thin rings or slices and sprinkle over the tomatoes.

Season to taste with salt and pepper, add olive oil, and gently stir to combine. Add basil leaves and stir again. Taste and adjust seasoning as desired.

Serve immediately or up to 3 hours after preparation.
