Eggs Benedict be without a great Hollandaise

Basil Hollandaise Sauce Recipe

Yields: 1 cup
Prep time: 10 min
Cook time: 5 min
Ingredients:
1/2 cup unsalted butter
2 large
egg yolks
4 teaspoons fresh-squeezed
lemon juice
2 teaspoons Dijon-style mustard
1 cup packed
basil leaves
Salt and freshly-ground pepper to taste
Preparation:
In a small saucepan over medium heat, melt the butter and
keep it warm.
In a blender or food processor blend the egg yolks, lemon juice, mustard, and
basil leaves for 5 seconds. With the motor running add the melted butter in a stream and
season with salt and pepper.
Makes approximately 1 cup.
HINT: I put my Hollandaise Sauce
in a small thermos to keep warm until serving time.
