This is a very easy meal to prepare and very delicious! This is one of the meals that I like to serve on a hot summer evening.

Stuffed Artichokes with Crab Salad Recipe

Recipe Type: Salad and Salad Dressing, Artichoke, Crab, Seafood
Yields: 4 servings
Prep time: 30 min


Ingredients:

1/3 cup finely-chopped celery
2 to 3 tablespoons finely-chopped onion
1/2 cup light mayonnaise
3 tablespoons capers
1/4 teaspoon horseradish or to taste
3 to 4 drops hot sauce or to taste
Coarse salt or Fleur de sel to taste
Juice of 1/2 lemon
1 pound cooked blue crab meat, lump crab meat, or Dungeness crab meat*
4 large artichokes, cooked, choke removed, and chilled

*If you can't get fresh crab, look for the pasteurized crab usually sold in the refrigerated case of your supermarket or fish store.


Preparation:

In a large bowl, stir together celery, onion, mayonnaise, capers, horseradish, hot sauce, salt, and lemon juice. Gently fold in the crab meat. Cover and refrigerate until ready to serve.

To serve, gently spread the leaves of the cooked artichokes. Place crab salad in the center of each artichoke.

Makes 4 servings.
