version of hummus.
Hummas (low fat)
I love hummus! Since I'm
usually trying to lose weight, I created this low-fat,
low calorie version of my regular hummus recipe. I substituted some low-fat peanut butter and a little sesame seed oil to replace the
higher-fat tahini. This low-fat version is so delicious that you won't miss the extra fat!

Refried
beans is probably one of the mostly frequently served side dishes
with most Southwestern entrées, along with some version of Spanish
rice. They
are one of the simplest of all southwestern foods to prepare, and can be more
versatile in their preparation than many people realize.
Senate Bean Soup
Bean soup, a favorite of Speaker of the
House, Joseph G. Cannon of Illinois, was omitted from the menu on one hot, humid
day in 1904. When speaker Cannon arrived for lunch and learned he could not
order it, he was more than a little upset. "Thunderation!" roared the speaker.
"I had my mind set for bean soup. From now on, hot or cold, rain, snow, or
shine, I want it on the menu every day." From that time on, Senate Bean soup has
appeared on the menu of the Senate Restaurant evey single day, regardless of the
weather.
Smoky Chipotle Hummus
I slightly adapted this recipe
from Bon Appetit magazine, October 2001.
This recipe is a fun twist
on traditional hummus recipes. The chipotle pepper lend a bit of heat and
smokiness, while the cilantro brightens the flavor.
