Pork Loin with Pumpkin Sage Bread Pudding
This recipe was adapted from a recipe from the Blue Sky Cafe in Manzanita, Oregon.  The original recipe appeared in the Oregonian newspaper on Tuesday, January 6, 2004.  The original recipe called for double-cut pork chops.  Since this cut of pork is harder to find, I substituted pork loin.

 

Pumpkin Cheesecake
Never again have to make a pumpkin pie for the holiday.  This cheesecake is absolutely wonderful.  Let your family be the judge!  I usually make this cheesecake ahead of time and freeze it.

 

Pumpkin Swirl Gingersnap Cheesecake
Here is a fun twist for your pumpkin cheesecake. Blending gingersnap cookie crumbs into your crust will enhance the pumpkin and you will experience the rich warmth of the two flavors dancing on your taste buds.  The delicate swirling of the pumpkin in the cheesecake makes a beautifully festive holiday dessert.

Wait until you smell the wonderful pumpkin aroma as these rolls bake!  They make a wonderful Thanksgiving or Christmas dinner roll, but are excellent anytime of the year.  I usually make and bake these dinner rolls a week ahead of time and freeze until ready to reheat.  This helps take some of the hassle out of the holiday meal.

 

 

Pumpkin Empanadas
Pumpkin pie may not be on the menu for a traditional Mexican-style meal, but pumpkin empanadas most definitely are, at least on the ones I have known.  Pumpkin empanadas are made both on Thanksgiving and Christmas.  Often they are served during Noche Buena, when those re-enacting the travels of Mary and Joseph have stopped at the chosen home to feast.

Pumpkin Pie (Thanksgiving Pumpkin Pie)
How about making this very easy and traditional pumpkin pie for your Thanksgiving dinner?  This recipe is from the 1960’s Betty Crocker cookbook.  I learned to cook from this cookbook.

 

Pumpkin Spice Drop Scones
Scones are best served warm and fresh, split open, and topped with either lemon curd or thick homemade jam and clotted cream (Devonshire cream or creme fraiche).  These delicious pumpkin scones are especially good in the Fall and Winter, but they can be enjoyed anytime of the year.

 

Pumpkin Spice Latte
There’s nothing like a pumpkin spice latte from Starbucks that announces fall has arrived!  If you have not enjoyed one of these lattes before, it’s like drinking a cup of warm pumpkin pie! This recipe is a copycat version that I have adapted.  I personally think this version has a richer pumpkin taste than Starbucks.

This recipe has been adapted from Chef Derek Barnes of Derek’s Culinary Casual restaurant, Sarasota, Florida. Chef Barnes likes to serve this delicious Pumpkin Bisque with Lavender Marshmallows and Candied Pecans.  Chef Barnes says, “I began this as an item for fall menus.  Now patrons request it beginning in September and even August.  It’s very popular.”

 

Shitake-Pumpkin Ravioli
Ravioli are surprisingly easy to make if you start with prepared pasta dough or wonton wrappers.  Canned pumpkin makes the firmest filling.

 

 

Spiced Pumpkin Mousse Trifle
Wouldn’t this be an excellent dessert for your Thanksgiving Dinner? Especially since it can be made ahead of time.  If you don’t have a true trifle bowl, use any straight-sided round glass bowl (the layers look beautiful from the sides of a glass bowl.

 

 

Upside Down Pumpkin Cake “Pie”
This is a favorite pumpkin pie substitute from the 1990s.  It’s like both a cake and a pie! Try serving this instead of the traditional pumpkin pie for Thanksgiving.
