Roasted Sweet Potato Wedges with Rosemary

3 large sweet potatoes
2 to 3 tablespoons butter
1 tablespoon minced fresh
rosemary leaves
Salt and coarsely ground black pepper

Preheat oven to 400 degrees F.

Cut potatoes lengthwise into 3/4-inch thick slices. In a large shallow baking pan, melt butter in oven. Add sliced sweet potatoes, tossing to coat well. Sprinkle with rosemary, salt, and pepper to taste.

Baked potatoes in middle of oven for approximately 20 minutes or until tender, gently tossing with a metal spatula halfway through baking time. Remove from oven and serve.

Makes 2 servings.
