Graham Cracker Marshmallow Bars Recipe

How about a delicious Graham Cracker Marshmallow Bar cookie?  So easy to make and so addictive!  An irresistible no-bake cookie treat that could not be any easier to make.  These chewy no-bake dessert bars are loaded with marshmallows and coconut, plus graham crackers.

Graham Cracker Marshmallow Bars Recipe:

Ingredients
  • 1/2 to 3/4 cups butter
  • 1 cup sugar (granulated)
  • 2 eggs, well beaten
  • 2 cups graham cracker crumbs
  • 1/2 cup flaked unsweetened coconut*
  • 1 teaspoon pure vanilla extract
  • 2 1/2 cups miniature marshmallows
Instructions
  1. In a medium-size saucepan over medium-high heat, combine butter, sugar, and eggs.  Cook, stirring constantly, until the mixture comes just to a full boil, then remove from heat, and allow to cool.

  2. When mixture has cooled, add the graham cracker crumbs, coconut, vanilla extract, and marshmallows.  Stir until the ingredients are well mixed.

  3. Press into a 9-inch by 9-inch baking pan.

  4. Cut into small squares and serve.

Recipe Notes

* Dried coconut comes in a variety of types:  desiccated, shredded, grated and flaked.  Because there is very little difference between them, these types of coconut can be used interchangeably in recipes.

    Solid no bake go to recipe! And omg delicious!! I doubled the recipe and left out 1/2 c of sugar, they’re still sweeter than I’d like. The butter equation was given in a range so I opted for less than more only to end up with a dry bowl of crumbs that wouldn’t press into bars so I melted the additional butter and mixed it by hand. Because the butter was warm, the recipe came together more easily so next batch I will combine everything while the egg mix is still warm to the touch. The bars were very good but lacking depth of flavor so I added chocolate drizzle on top. I sent half the batch to the freezer. The other half we ate!!

    My aunt used to make something very similar and she put chocolate frosting on them. They were called secret squares. I have a question. Don’t the eggs scramble?
