Baked Whole Butternut SquashBaked Whole Butternut Squash is much easier to make than you may think. Try this easy-to-make recipe and your house will smell fabulous as this squash bakes.  This technique is so easy and so healthy!

Butternut squash is one of my favorites, the rich orange squash bakes well, and you can use the leftovers to make fabulous soups.  Butternut squash grills up great too.  Last summer I had a butternut squash vine and grew several beautiful squash.  If you do not wash them, they can store for quite a long time.  I just baked my last one up this fall.

Baked Whole Butternut Squash Recipe:

Baked Whole Butternut Squash Recipe

Prep Time: 5 minutes

Cook Time: 60 minutes

Yield: 2 to 4 servings


1 (2 to 3 pounds) butternut squash
1 to 2 tablespoons lime juice
Salt and coarsely-ground pepper to taste



Preheat oven to 350 degrees F.  Wash outside of the butternut squash.

Place whole squash onto an ungreased baking sheet, and prick in a few places with a sharp knife.

Bake, uncovered, approximately 60 to 90 minutes or until tender and easily pierced with a fork.  Remove from oven.

Cut squash in half lengthwise and remove fibers and seeds.  Season each half with lime juice, salt, and pepper.  Cut each half in half again and serve.

Variation:  In a small frying pan over low heat, melt 2 tablespoons butter; stir in 1/2 teaspoon ground cinnamon.  Add 1 tablespoon brown sugar; stir until well blended.  Brush the butter mixture over each portion of squash before servings.

Makes 2 to 4 Servings.
