In a large frying pan over medium heat, saute the onion and garlic until the onions begins to soften and the mixture is fragrant.
Reduce heat to low and add the Fava Beans, Jasmine rice, salt, and chicken stock. Cook, with lid askew, until rice is tender. Keep adding additional chicken stock, if needed.
Once the rice is tender, reduce heat a little and continue to cook until a golden crust forms on the bottom of the rice. Watch carefully and do not let the rice burn. Add small amounts of additional chicken stock as necessary. You can use a spatula to check the bottom of the rice. When it is golden, it will lift easily and hold together.
Makes 4 servings.
* When purchasing fresh Fava Beans, select pods that are firm and without many markings. The pods should be heavy with just a hint of the beans inside. To store, place the fresh pods in a plastic bag and store in the refrigerator. Fresh Fava Bean pods will keep for 5 to 7 days in the refrigerator.
