Heat a non-stick pan or griddle over medium heat. Place the bread slices on the hot pot or griddle and toast lightly on just one side.
Flip the bread over, place the cheese slices on top of the toasted side and sprinkle with Aleppo red pepper flakes. Place the lid on the pan, and let cook until the cheese is just barely melted.
Meanwhile, slice the red pears. Place all on a plate and enjoy.
Serves many.
* You could substitute regular sourdough bread if you can not find Jalapeno sourdough bread.
** Aleppo Pepper - A Turkish crushed chili has an ancho-like flavor with a little more heat and tartness (medium level of heat, sweet, fruity, complex with hints of Cumin). Also Known as Halaby Pepper. If you cannot find this pepper, replace with the regular crushed red peppers.
