Preheat oven to 400 degrees F. Grease or spray with non-stick cooking spray a 10-inch pie plate or a square 9-inch baking dish.
In large frying pan over medium-high heat, brown ground beef, onions, and garlic; drain off fat and discard. Stir in Taco Seasoning, green chiles, and corn. Spoon the prepared meat mixture into the prepared pie plate or baking dish.
In another medium-sized bowl, stir together the milk, eggs, and Bisquick Baking Mix until blended. Stir in 1/2 cup grated cheddar cheese. Pour mixture over the meat mixture in the pie plate.
Bake 25 to 30 minutes or until knife inserted in the center comes out clean or until the internal temperature registers at least 160 degrees F. on your cooking thermometer and the filling is set. During the last 10 minutes of cooking, sprinkle the top with the remaining grated cheese and bake for an additional 10 minutes.
Remove pie from oven and let cool 5 minutes before serving.
When ready to serve, top with the toppings of your choice.
Savory Impossible Pies may be covered and refrigerated for up to 24 hours before baking. You may need to bake a bit longer since it’s starting out cold. Watch and check for doneness.
Makes 6 servings.
* For additional spice, substitute diced jalapeno peppers and a few shots of Tabasco Sauce.
** Bisquick is a pre-mixed baking product sold by General Mills under their Betty Crocker brand. It consists of flour, shortening, salt, and baking powder.
