In a large frying pan over medium-high heat, add ground beef and taco seasoning mix or chile peppers; saute until brown. Remove from heat and drain off any fat and discard.
On individual serving plates or a large ovenproof platter, spread the refried beans, cooked ground beef, sliced onion, and cheddar cheese. Arrange corn chips around sides of dish.
In a microwave oven or conventional oven, heat just until cheese starts to melt. Remove from oven.
To serve, top with lettuce and any toppings of your choice (see Optional Topping Ideas above). NOTE: I sometimes place the prepared toppings in individual bowls and let everyone choose their toppings to add.
Makes 4 servings.
* Ground chicken could be substituted, if you desire.
** Vary the hotness of the nachos to your taste.
*** You can substitute with a variety of different cheeses, such as hot pepper cheese, or Monterery Jack cheese.
