Spray a 13x9-inch baking dish with vegetable spray.
In a shallow pie plate, combine evaporated milk and soy sauce.
In another shallow pie plate, combine corn flake crumbs, salt, and pepper.
Dip chicken into evaporated milk mixture and then roll in the seasoned crumb mixture.
Place chicken in prepared baking dish; cover with plastic wrap.
Cook in microwave oven on high for 10 minutes; turn dish and bake another 8 to 10minutes. Remove from microwave and let stand 3 to 5 minutes before serving.
Makes 4 servings.
