Preheat the oven to 400 degrees F. Place oven rack in center of oven.
Line the baking sheet with aluminum foil or parchment paper (this will make cleanup easier later). Place a wire cooling rack on top of the aluminum foil and spray with non-stick spray.
Lay the bacon strips out flat, in a single layer and leaving space so they do not overlap on the baking sheet. If you desire, it is easy to flavor up the bacon. Try black pepper or brown sugar sprinkled on the top before baking – it will give your bacon a whole new flavor. Check out my recipe for Candied Bacon - Brown Sugar Bacon.
Bake for 10 minutes, turn bacon over and baked an additional 10 minutes. Depending on the thickness of your bacon and also how crisp you want your bacon, you may need to bake an additional 5 to 10 minutes.
Make sure you are watching the bacon closely during the last few minutes of baking to ensure that the bacon does not burn. Once the bacon has reached your desired level of crispiness, remove from oven immediately and place on paper towels to soak up any remaining bacon grease.
NOTE: You can bake the bacon a day before you need it and just heat it up in the oven when you need it.
Clean Up: Pick up the corners of the foil carefully to collect the bacon grease in the middle and pour into a jar or glass container. Store the bacon fat in the refrigerator.
