In a food processor or blender, combine the toasted sesame oil, olive oil, rice wine vinegar, Dijon mustard, capers, and pepper until well-blended.
NOTE: Do not add any salt to the dressing as the capers provide plenty.
Serve at room temperature.
Makes approximately 1 cup of vinaigrette.
* I love the taste of toasted sesame oil. It adds a heaven[y and nutty flavor when added. I store my toasted sesame oil in the refrigerator and bring to room temperature before using.
** Capers generally come in brine but can also be found salted and sold in bulk. Either way, rinse before using to flush away as much salt as possible. The taste is slightly astringent and pungent, and they can lend piquancy to many sauces and condiments. They can also be used as a garnish for meat and vegetable dishes.
