2 tablespoons butter
1 medium-sized onion
* If using meat from a whole cooked chicken cut or pull most of the meat off the bones and skin; reserve approximately 50% of the chicken meat for the soup (as much or as little as you desire). See recipe for Pressure Cooking a Whole Chicken in the Instant Pot.
Instructions also provided to pressure cook the soup with raw or frozen chicken meat.
** You could use any type of pasta that you desire.
Press the SAUTE button on the Instant Pot panel, then press the ADJUST button until you see the MORE heat setting. Once the Instant Pot panel registers "HOT", add the butter and let melt. Once the butter is melted, add the onions, carrots, and celery and saute for a couple minutes until they are softened. Next, add the garlic, chicken bouillion and herbs (Oregano, basil, and thyme). Saute together with the onions for 30 seconds to bring out the aroma. Press the KEEP WARM/CANCEL button to turn off the SAUTE mode.
Pour in the chicken broth or chicken stock. (Note: If you do not have enough chicken broth, you can do a combination of broth and water.) Stir everything together. (Learn how to Pressure Cook Chicken Bone Broth Soup in the Instant Pot.)
Cooking With Raw or Frozen Chicken:
If you do not have pre-cooked chicken, then you can add raw or frozen chicken meat that is cut up into smaller chunks at the same time as the chicken broth.
Cover with a lid and turn closed to seal. On the Instant Pot panel, press the MANUAL button, and adjust the setting to HIGH PRESSURE. Set the cooking time for 7 minutes. When cooking time is done, place a kitchen towel over the pressure value to catch any liquid that may spurt out when the pressure is released. Now open the pressure valve to quick release the pressure. Note: If you cooked raw or frozen chicken meat with the broth and vegetables, then allow the pressure to natural release for 10 minutes, before opening the valve to release the rest of the pressure.
Press the KEEP WARM/CANCEL button to turn off. Next press the SAUTE button and then the ADJUST button until you see the MORE heat setting. Let the soup mixture come to a boil, then add the dried pasta noodles cook until tender. Stir in the cooked chicken and let simmer in the soup until the chicken meat is heated through. Press the KEEP WARM/CANCEL button to turn the Instant Pot off.
Serve soup in bowls and enjoy with some homemade French Bread.
