It is easy to see why quinoa was the one called the “gold of the Incas”. Quinoa (pronounced Keen-wah) is very nutritious, grows well even under harsh conditions, is easy to prepare, and can be used in a variety of ways.
Cook quinoa (see directions above). Allow the quinoa to cool to just about room temperature and then fluff with a fork.
While the quinoa cools, combine olive oil, salt, lemon juice, tomatoes, cucumber, green onions, carrots, and parsley in a large bowl. Also add any Optional Additions that you desire.
Stir in the cooled quinoa.
NOTE: Can be eaten right away but the longer this salad sits, the more flavorful it becomes.
Add one or two of the following to taste:
fresh chopped mint or cilantro
crumbled feta cheese
olives
minced jalapeno pepper
