Question:

What is DelMonico steak?  I am totally ignorant regarding what else it may be called.  I used to be able to buy this steak in the grocery store and now I never see it. – Mike (5/28/02)

 

Answers:

The meaning of a Delmonico steak has changed over the years and from place to place.  Depending on the place, the name today is regularly used as a synonym for a club steak, a New York strip steak, a boneless rib-eye steak, and several other cuts.

Today, no one seems to remember the exact cut of beef that was the original, authentic Delmonico Steak.  This is unfortunate because the name originally applied to a very rare, tender and tasty steak that became world-famous in the 19th Century.

The original Delmonico Steak was served at Delmonico’s Restaurant in New York city in the mid 1800s.
