Sesame Dijon and Capers Vinaigrette Recipe:

 

Sesame Dijon Caper Vinaigrette recipe is very different from the usual salad dressing.  It is a quick and easy-to-make vinaigrette that you will love.  This vinaigrette is also delicious serve over fresh roasted vegetables, such as green beans and asparagus.  I like that I can control the ingredients in my dressings, and make them fresh for dinner all the time.  Once you start making your own salad dressings you will not want to buy bottled dressing anymore.

Ingredients
  • 1/4 cup toasted sesame oil*
  • 1/4 cup olive oil, extra-virgin
  • 3 tablespoons rice wine vinegar
  • 1 tablespoon Dijon mustard
  • 3 tablespoons capers, rinsed and drained**
  • Pepper to taste
Instructions
  1. In a food processor or blender, combine the toasted sesame oil, olive oil, rice wine vinegar, Dijon mustard, capers, and pepper until well-blended.

  2. NOTE:  Do not add any salt to the dressing as the capers provide plenty.

  3. Serve at room temperature.

  4. Makes approximately 1 cup of vinaigrette.

Recipe Notes

*  I love the taste of toasted sesame oil.  It adds a heaven[y and nutty flavor when added.  I store my toasted sesame oil in the refrigerator and bring to room temperature before using.

Sesame Dijon Vinaigrette with Capers**  Capers generally come in brine but can also be found salted and sold in bulk.  Either way, rinse before using to flush away as much salt as possible.  The taste is slightly astringent and pungent, and they can lend piquancy to many sauces and condiments.  They can also be used as a garnish for meat and vegetable dishes.
