Marinated Cheese Appetizer Recipe

Recipe Type: Appetizer, Cheddar Cheese
Yields: 12 to 16 servings
Prep time: 20 min


Ingredients:

Marinade (see recipe below)
1 (8-ounce) block sharp cheddar cheese, chilled
1 (8-ounce) package cream cheese, chilled
Fresh Parsley sprigs for garnish


Preparation:

Prepare Marinade; set aside.

Cut the block of cheddar cheese in half lengthwise. Then, cut crosswide into 1/4-inch slices; set aside. Repeat the same procedure with the cream cheese.

Arrange the cheddar cheese and cream cheese slices alternately in a shallow baking dish, standing the slices on their sides. Pour the prepared Marinade over the cheese slices, cover and marinate in refrigerator at least 8 hours.

After refrigerating, transfer cheese slices to a serving platter in the same alternating fashion, reserving marinade. Spoon marinade over the cheese slices. Garnish with parsley and serve with assorted crackers.

Makes 12 to 16 serving.


Marinade:
1/2 cup olive oil
1/2 cup white wine vinegar
3 tablespoons chopped fresh parsley
3 tablespoons minced green onion
1 teaspoon granulated sugar
1/4 teaspoon dried basil leaves
1/2 teaspoon salt
1/2 teaspoon black pepper
3 cloves garlic, minced
1 (2-ounce) jar diced pimento, drained

In a jar with a tight-fitting lid, combine olive oil, vinegar, parsley, green onion, sugar, basil, salt, pepper, pimento, and garlic. Cover the jar tightly and shake well; set aside until ready to use.
