Frosted Date Cream Cookies Recipe

Recipe Type: Cookies, Christmas Cookie, Dates, Drop Cookies
Yields: 4 dozen cookies
Prep time: 15 min
Cook time: 10 min


Ingredients:

1/4 cup butter, softened
3/4 cup firmly-packed brown sugar
1/2 cup sour cream
1/2 teaspoon pure vanilla extract
1 egg
1 1/4 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1 package (8 ounces) chopped dates
1/2 cup chopped nuts (nuts of your choice)
Vanilla Frosting (see recipe below)


Preparation:


Preheat oven to 400 degrees F. Lightly grease a cookie sheet..

In a large bowl, beat together the butter, brown sugar, sour cream, vanilla extract, and the egg with a spoon. Stir in flour, baking soda, and baking powder. Stir in dates and nuts.

Drop dough by teaspoonfuls onto the prepared cookie sheet. Bake approximately 10 minutes or until golden brown. Remove from oven and remove from cookie sheet to a wire rack to cool completely, about 1 hours.

Prepare Vanilla Frosting. Over the top of the cooled cookies, spread with the Vanilla Frosting.

Yields 4 dozen cookies.
 

Vanilla Frosting:
1/2 cup butter
3 cups powdered (confectioner's) sugar
1 teaspoon pure vanilla extract
3 to 4 tablespoons hot water

In a 2-quart saucepan over low heat, melt butter; remove from heat. Stir in powdered sugar and vanilla extract until blended. Stir in hot water, 1 tablespoons at a time, until frosting is smooth and spreadable.
