A near-perfect balance of sweet, smoky, crusty, and salty, the BLT sandwich is what food dreams are made of! This sandwich is a favorite of both my husband and myself. Especially during the fresh tomato season!

BLT Sandwich Recipe

Recipe Type: Sandwich, Bacon, Tomatoes
Yields: 1 sandwich
Prep time: 15 min


Ingredients:

2 slices thick-sliced bacon
2 slices high-fiber bread
1 tablespoon food-quality fat-free or light mayonnaise
2 to 3 leaves lettuce
Thick-sliced tomatoes*

* If it is tomato season in the area you live in, use your locally grown vine-ripened tomatoes. So good!


Preparation:

In a frying pan or in your microwave, fry bacon until crisp. If frying, place the cooked bacon on paper towels to drain off any excess fat.

Microwave Bacon: Place 2 sheets of paper towel on a microwave safe plate, lay the bacon on top of the paper towels, not overlapping the slices. Place 2 more sheets of paper towels on top of the bacon. Place in the microwave on high for approximately 2 minutes per thick-sliced bacon slice. Two (2) slices of thick-sliced back = 4 minutes.

Toast the bread until light golden brown.

Spread mayonnaise over 1 slice of bread; top with lettuce leaves, bacon slices, and tomato slices. Top with remaining slice of bread.

Cut the sandwich in half and serve. Enjoy!

Makes 1 very delicious BLT Sandwich.
