Corned Beef Bubble and Squeak Recipe

This Corned Beef Bubble and Squeak Recipe is a great way to make use of those wonderful Corned Beef and Cabbage leftovers.  Bubble and Squeak is a traditional Monday lunch in England to take the leftover potatoes and vegetables from Sunday supper and fry it up to enjoy for lunch the next day with eggs, bacon, and/or any leftover meat.  There is no rule for this recipe, other than making good use of potatoes and the additional leftovers.  Any cooked potato will do, mashed, boiled or roasted.  The odd name is said to come from the noises made while cooking it.

In America, this would make a great brunch or breakfast dish.  Fry it up to a nice golden brown color and enjoy!  My Mom used used to cut the ingredients smaller and called this dish Corn Beef Hash!  My Dad liked to pour ketchup on his serving.

Corned Beef Bubble and Squeak Recipe:

Corned Beef Bubble and Squeak Recipe

Prep Time: 5 minutes

Cook Time: 20 minutes

Yield: serves many

Ingredients:

4 tablespoons butter
1/2 cup finely-chopped onion
Leftover cooked potatoes (mashed, roasted, and/or boiled), chopped if needed
Leftover vegetables (cabbage, carrots, etc.) chopped*
Leftover Corned Beef (or left over pork or other beef) chopped
Salt and pepper to taste

 

Instructions:

In a medium to large frying pan or skillet over medium-high heat, melt the butter.  Add the onion and saute for 2 minutes or until translucent.

Add the potatoes, cabbage, carrots, corned beef, and sprinkle with salt and pepper.  Press mixture down with your spatula and let fry approximately 8 to 10 minutes to allow browning.  Turn mixture over and press down with your spatula again.  Allow to fry an additional 6 to 8 more minutes or until until the edges are a golden brown.

Remove from heat, season with additional salt and pepper (if desired), and serve.

Excellent served with Irish Soda Bread.

Serve many.

 

Variation Idea:

Make 4 wells in the mixture and crack an egg in each well, cover pan, and cook gently until the eggs are set.

You could also poach or fry the eggs and then place on top of the mixture.

Excellent served with bacon and eggs or as a light supper dish.
