How to Make Beef Steak and Roast Sauce:
Red Meat Marinade is a wonderful recipe that was shared by Alleta Huston of Newberg, OR. This is the best recipe for marinating ribs, and steaks. It is an easy-to-make recipe that adds a full rich flavor to any cut of beef. Any good red meat marinade should have a good kick to it, usually an acid that helps to tenderize the beef.
This recipe utilizes fresh lemon juice as the acid. Lemon juice is a great tenderizer and always leaves a freshness to the flavor of the meat. When marinating, be sure to refrigerate the meat if it will be over 20 minutes before cooking. Whole steaks and roasts can marinate in the refrigerator for 12 to 24 hours. If your meat is cubed reduce the time to two or three hours.

- 1/4 cup herb vinegar
- 1/4 cup lemon juice, fresh squeezed
- 1/4 cup soy sauce
- 1/8 cup Worcestershire Sauce
- 1/4 cup olive oil, extra-virgin
- 2 tablespoons dry mustard
- 1/2 teaspoon salt
- 1/4 tablespoon pepper
- 1 teaspoon parsley, dried (or 1 tablespoon fresh parsley)
- 1 to 2 garlic cloves, crushed
In a small non-reactive mixing bowl, combine vinegar, lemon juice, soy sauce, and Worcestershire sauce. Whisk in olive oil, mustard, salt, pepper, and parsley; add garlic.
Pour over meat that has been placed in a glass dish or re-sealable plastic storage bag; marinate at least 2 hours to overnight in refrigerator.
Remove meat, discard used marinade, and use and cook as desired.
