Graham Cracker Chocolate Cookies are one of my favorite childhood treats! So easy to make and so easy to turn ordinary graham cracker into an extraordinary treat. Just prepare this very easy chocolate frosting to put between two graham crackers and then enjoy. Your children will love these treats, plus you will feel like a child yourself.
My mother always made these with leftover frosting (I thinks she made extra frosting on purpose). To this day, when I want a quick chocolate fix, I make these Graham Cracker Chocolate Cookies. I know I should not do this – but I do!

- 2 cups powdered sugar (confectioners' sugar)
- 1/4 cup butter, softened
- 2 tablespoons unsweetened cocoa powder
- 3 tablespoons liquid (water, coffee, or milk)
- 1/4 teaspoon pure vanilla extract (optional)
- Graham Cracker squares

In a small bowl, combine powdered sugar, butter, unsweetened cocoa, liquid of your choice, and vanilla extract until mixed to a spreading consistency.

NOTE: Depending on how precise you are with your measuring, you may need to either add additional powdered sugar or liquid to get a good spreading consistency.

Spread on graham cracker squares.

Either eat open faced or press another square of a graham cracker on top.
