Oh Henry Bar Cookies will remind you of the famous Oh Henry® Bars by Nestles. Remember those cookies – so good?
This recipe is my version of that cookie. These delicious chocolate bars are a chocolate oatmeal cookie that is so easy to make. Only the base of the cookie is baked. They are quick and easy to make. If you like the candy bar, Oh Henry® then give these knock-offs a try.
- 4 cups quick-cooking oatmeal
- 1 cup (firmly-packed) brown sugar
- 1/2 cup butter, melted
- 1/2 cup dark Karo syrup
- 1 teaspoon pure vanilla extract
- 12 ounces semisweet chocolate chips
- 3/4 cup peanut butter (crunchy is best)

Preheat oven to 350 degrees F. Grease 13- x 9-inch baking dish or pan.

In a large bowl, mix together the oatmeal, brown sugar, butter, Karo syrup, and vanilla extract until well blended.

Firmly press dough into prepared baking dish or pan and bake for 15 minutes only. NOTE: Do not overbake or the cookie base will turn rock hard. Remove from oven and let cool.

In a saucepan over low heat, melt chocolate chips and peanut butter, stirring to blend. Remove from heat.

Spread warm chocolate/peanut butter mixture over the cooled cookie base. Refrigerate at least 1 hour. After 1 hour, cut into bars or squares.

Makes 2 dozen bars.
