These delicious Stuffed Artichokes with Smoked Salmon are an very easy meal to prepare. I created this recipe when I had extra homemade Smoked Salmon that I needed to use. Since I love both artichokes and smoked salmon, this Stuffed Artichoke dish is a winner in my book.
During artichoke season, fresh artichokes are a must have. A good test of freshness is to press the leaves against each other which should produce a squeaking sound. If the artichoke feels heavy for its size and squeaks when squeezed, you have found a fresh artichoke.

The “vegetable” that we eat is actually the plant’s flower bud. If allowed to flower, the blossoms measure up to seven inches in diameter and are a beautiful violet-blue color.

- 3 to 4 eggs, hard-cooked, chopped*
- 1/4 cup mayonnaise
- 1 fresh chive, minced
- 1 tablespoons capers, rinsed and drained
- 1/2 teaspoon coarse salt or Fleur de sel
- Juice of 1/2 lemon
- 6 to 8 ounces smoked salmon, cut or shredded into small pieces
- 2 large artichokes, cooked, coke removed, and chilled*
- Lemon wedges
In a medium bowl, stir together chopped hard-cooked eggs, mayonnaise, chives, capers, salt, and lemon juice. Stir in smoked salmon.
Cover and refrigerate until ready to serve.
To serve, gently spread the leaves of the cooked artichokes. Place smoked salmon salad in the center of each artichoke. Serve with lemon wedges.
