German Herring Salat (Herring Salad)
This is our family's recipe for making German Herring Salad. This recipe is from my children's grandmother, Gertrude Zemp. We make this for Christmas Eve every year. It is very easy to do, and as the herring is already "pickled," it holds up well in the refrigerator.

Lobster Cakes with Papaya Mayonnaise
The lobster meat shines in these wonderful hand-made lobster cakes. Can be served as an appetizer or an entree. I adapted this recipe from Chef Gregory Cornelius of the Crescent Club in Memphis, Tennessee.

These oysters make a great appetizer. So easy and so delicious! My husband just loves these! We can make a dinner of these oysters.

Shrimp:

Anytime Balsamic Shrimp
I slightly adapted this recipe by cookbook author Julee Rosso. Julee and her husband, Bill, own the Wickwood Inn in Saugatuck, MI. Julee says, "This is one of my all-time favorite dishes, and it couldn't be simpler. It began because I brush "tradizionale" (50 - 100 years old) balsamic vinegar on shrimp as we're grilling them. But only "tradizionale" works for that because it's so extraordinary - commercial balsamic is far too acidic. And when I'm out of the real stuff - I make Faux Aged Balsamic Vinegar - simple enough."

California Rolls
Making sushi at home is easy to do. Ingredients and equipment can be found at Japanese and Asian foods stores as well as at most large food or grocery stores. I did a large amount of reading on how to make sushi rolls before attempting my first ones. Sushi making does requires a small amount of initial practice. Don't be afraid to try!

Tuna:

Ahi Tuna Poke - Hawaiian Poke
Poke (pronounced POH-kay) is served in most Hawaiian homes and restaurants as a side dish, and no gathering in Hawaii would be complete without a few bowls of poke. In Hawaiian, poke means "cut piece" or "small piece." Poke is bite-size pieces of raw fish doused in seasonings. Poke is actually the Hawaiian version of the elegant Japanese sashimi (a combining of the Hawaiian and Japanese taste for raw fish).
