"I drink champagne when I'm happy and when I'm sad. Sometimes I drink it when I'm alone. When I have company, I consider it obligatory.
I trifle with it if I'm not hungry and drink it when I am. Otherwise I never touch it - unless I'm thirsty."

- by Madame Bollinger (one of the grandes dames of Champagne).

The only wine entitled to the name Champagne is the sparkling wine produced in the French region of the same name. Regardless of how it's made, an American sparkling wine may call itself "champagne" if the label also notes where it was made.
