What could be more refreshing on a summer’s day than the tart flavors of lemon of this delicious Sgroppino al Limone drink?  This heavenly drink also makes a delicious after dinner drink – the perfect light ending to a wonderful meal.  Whip this drink up in about 10 minutes or less, pour it into a jar, and serve immediately or pop into the freezer until ready to serve.

Some versions of this drink use gelato but most use sorbet, which has no dairy.  In Venice, your waiter might make this drink at your table by beating the sorbet and wine into a mixture as refreshing as whipped snow.

Servings: 4 servings
Ingredients
  • 2 cups (16 ounces) lemon sorbet (good-quality), softened
  • 2 tablespoons vodka, chilled
  • 1/3 cup sparkling wine or Italian Prosecco wine, chilled
  • Zest of one lemon
Instructions
  1. Chill 4 champagne flutes.

  2. In a bowl, whisk lemon ice cream until smooth.

  3. Gradually whisk (do not use a blender) in the vodka and sparkling wine or Prosecco.  Donot whisk too much or it will become too liquid.  You must whisk the sparkling wine in by hand because a machine will melt the ingredients.  You do not want it too thick, but you do not want it real thin, either.

  4. Pour mixture into a pitcher and serve immediately in chilled champagne flutes, tall glasses, or goblets.

  5. Sprinkle lemon zest on top. Serve with small spoons.

  6. NOTE: The drinks will separate if left standing.

  7. Makes 4 servings.
