Watermelon Salad with Mint Leaves Recipe

 

Watermelon Salad with Mint Leaves is a very stunningly beautiful salad with the contrast of red and green that is so delicious and very refreshing!  This salad is the absolute ultimate refresher on a hot summer day or evening.  Definitely a treat that you will want to make often during the summer months.  Watermelon salad is so ultra simple to make and turns an ordinary watermelon into something very gourmet with this easy-to-make Watermelon Salad.  Even children love this salad, but if no children will be eating this salad, you could even add a little rum.  Yummy!

Be sure and add the fresh mint leaves just before serving so the mint leaves will still be fresh and not soggy.  Nobody likes soggy mint leaves – I love the aroma and smell of fresh mint!

Storing Fresh Mint:  Store fresh mint leaves by placing the mint stems down in a container with an inch of water in the bottom.  Cover with a lid or plastic beg, changing water every few days.

Ingredients
  • 1 (5-pound) watermelon
  • 1 sweet onion (such as Vidalia or Walla Walla)
  • 1/4 cup red or white wine vinegar (your choice)
  • Salt and freshly-ground black pepper
  • 1/3 to 1/2 cup olive oil, extra-virgin
  • 2 tablespoons fresh mint, chopped
  • 6 whole mint sprigs (for garnish)
Instructions
  1. Cut the flesh from the melon and cut into bite-size pieces, removing and discarding any seeds.  Place watermelon pieces in a large serving bowl.

  2. Peel and slice the onion into rings.  Gently combine the onion rings and watermelon together.

  3. In a small bowl, combine the vinegar, salt, and pepper; whisk until salt is dissolved.  Slowly whisk in the olive oil, a few drops at a time.  Add in the chopped mint, taste, and adjust seasonings.  Pour the dressing over the melon/onion mixture and toss gently until everything is coated and evenly mixed.

  4. To serve, divide salad among individual plates and garnish with mint leaves.

  5. Serves many.
