Marinated Cheese is a very colorful and tasty appetizer with a great presentation. Because of its beautiful presentation, it makes a wonderful holiday appetizer to serve your family and friends. This cheese dish does take a while to prepare, but it is worth it. Give it a try and you will not be sorry!
- Marinade (see recipe below)
- 1 (8-ounce) block sharp cheddar cheese, chilled
- 1 (8-ounce) package cream cheese, chilled*
- Fresh Parsley sprigs for garnish

Prepare Marinade; set aside.

Cut the block of cheddar cheese in half lengthwise. Then, cut crosswise into 1/4-inch slices; set aside. Repeat the same procedure with the cream cheese.

Arrange the cheddar cheese and cream cheese slices alternately in a shallow baking dish, standing the slices on their sides. Pour the prepared Marinade over the cheese slices, cover and marinate in refrigerator at least 8 hours.

After refrigerating, transfer cheese slices to a serving platter in the same alternating fashion, reserving marinade. Spoon marinade over the cheese slices. Garnish with parsley and serve with assorted crackers.

Makes 12 to 16 serving.
* Refrigerating the cream cheese makes for easier slicing.
- 1/2 cup olive oil
- 1/2 cup white wine vinegar
- 3 tablespoons parsley, fresh, chopped
- 3 tablespoons green onion, minced
- 1 teaspoon sugar, granulated
- 1/4 teaspoon basil leaves, dried
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 3 cloves garlic, minced
- 1 (2-ounce) jar pimento, diced, drained

In a jar with a tight-fitting lid, combine olive oil, vinegar, parsley, green onion, sugar, basil, salt, pepper, pimento, and garlic. Cover the jar tightly and shake well; set aside until ready to use.
