Root Beer Float Granita Recipe

 

I created this wonderful Root Beer Float Granita for a summer dinner party.  As I love root beer floats, this just seemed logical that it would be delicious.  So simple to make and prepare and so delicious!

Root Beer Float Granita Recipe:

Ingredients
  • 6 cups (1 1/2 quarts) root beer
  • 1/2 quart vanilla ice cream, good-quality
Instructions
  1. Pour root beer into a large baking dish.  Cover tightly with plastic wrap and freeze approximately 45 minutes or until icy at edge of pan.

  2. After 45 minutes, whisk to distribute frozen portions evenly.  Cover and freeze again until icy at edge of pan and overall texture is slushy (be sure to scrape the ice crystals off the sides and into the middle of the pan) about 45 minutes.

  3. After 45 minutes, again whisk to distribute frozen portions evenly.  Cover and return to freezer and freeze about 3 hours or overnight until frozen solid.

  4. When ready to serve the granita, remove from freezer.  Using a fork, scrape granita down length of pan, forming icy flakes.  Return to freezer for at least 1 hour. Can be made 1 day ahead.  When served, the granita should look like a fluffy pile of dry red crystals.

  5. Place frozen vanilla ice cream in your refrigerator to melt.  When melted, store in refrigerator until ready to serve.

  6. To serve, scoop flaked root beer granita into tall goblets or parfait glasses.  Top each serving with approximately 1/4 cup melted vanilla ice cream.

  7. Serve immediately with iced tea spoons.

  8. Makes 8 servings.
