Questions and Answers – Definition of Salmon en Croute

 

Question:

What does Salmon en Croute meant?  Being a court reporter, I hear all kinds of terms.  In a deposition that I am working on involving microwave ovens, a menu item came up: salmon en cru (that is the phonetic spelling, of course.)  I went to Google to see if I could find a culinary dictionary to be sure how to spell this particular recipe name.  I am not looking for a recipe at all.  I have searched and searched, but darned if I can find it!

Salmon en Croute = croute is French for “crust.”  So, it means salmon in a crust.

En Croute is a French term that describes a food baked (that is wrapped in pastry crust).  This is a classic French dish that when translated, croute means crust.
