  2. In a medium-size bowl, dissolve the lime gelatin in the boiling water, stirring for 2 minutes with a rubber spatula, until all the crystals are dissolves; set aside.  Add the 1 cup cold water to the gelatin mixture.  Cover with plastic wrap and refrigerate for 1 hour to a soft-set gelatin mixture.

  3. Place each melon half into a small bowl to hold upright.  If you also cut a thin slice off bottom of each melon shell half, this will also help to it to stand upright.  Spoon the slightly-set gelatin into the center of each melon.  Cover with plastic wrap and refrigerate 4 hours or overnight until firmly set.

  4. When ready to serve, remove the melon halves from the refrigerator and cut each melon into wedges or slices.  When placing on serving plates, do it carefully so the gelatin stays inside the melon wedge.

  5. Makes 4 to 6 servings.
