Raspberry Vinaigrette Recipe


Raspberry Vinaigrette is my go-to salad dressing during our local raspberry season.  This salad dressing is delicious and easy to make.  Use fresh raspberries if possible, but in a pinch frozen raspberries will do.  For one of my favorite go to summer salads I love to pour it over a spinach salad.  The tangy sweet raspberry and dark green spinach make a great taste sensation.  Once you start making your own salad dressings, you will not want to go back to store bought.

  • 1/2 cup raspberry vinegar
  • 1/4 cup raspberries (fresh or frozen)*
  • 1/4 cup honey 
  • 1/2 cup fresh basil leaves
  • 3/4 cup olive oil, extra-virgin
  1. Raspberry VinaigrettePlace the fresh raspberries in a colander and just lightly rinse raspberries just before using - do not soak them as they absorb water.  

  2. In a blender or food processor, combine raspberry vinegar, raspberries, honey, and basil; whirl 1 minutes or until well blended.  With the motor on, add olive oil in a slow steady stream, whirling until dressing is smooth.  Note: By gradually whisking or blending the oil into the vinegar, you create an emulsion (a mixture of two liquids that usually don't combine smoothly).

  3. Store, covered, in the refrigerator.  Serve at room temperature.

DO NOT OVERDRESS YOUR SALADS - Too much salad dressing will weight down the salad ingredients and mask their flavors.  The dressing's role is to highlight not to overpower the salad ingredients.  A general rule is 1/4 cup of dressing for 6 cups of greens. As soon as your salad is mixed, taste a leaf to see if there is sufficient dressing.  If not, drizzle some more over the salad, a tablespoon at a time; toss and taste again.


Recipe Notes

* When buying fresh raspberries, select unblemished berries that are in dry and unstained containers.  Raspberries should be stored unwashed and uncovered in the refrigerator.
